Frog is searching for a strong leader that is completely responsible for all aspects of the culinary operation in all divisions; Catering and Retail Restaurants. This position is a key role within the company. The EC must ensure the highest quality of food production and presentation; control costs in food and labor by effectively purchasing and scheduling production and events while maintaining excellent food and service. High levels of cleanliness at all times must take place. EC builds a strong team, developing talented staff and providing support and leadership to all culinary and kitchen staff.
QUALIFICATIONS AND REQUIREMENTS
-Minimum of (5) years progressively responsible culinary and catering experience in 4 or 5 Star property or upscale catering operation
-Demonstrate thorough mastery of all cooking techniques
-Demonstrate knowledge of all protein butchery, portioning and pricing
-Execution of high volume catering
-Proficient use of computers - to include various computer programs: Microsoft Office programs, ChefTec, e-mail and the Internet.
-Good communication skills both written and verbal
-Excellent organizational skills
-Strong knowledge of food trends with a focus on quality, production, sanitation, food cost controls, marketing and presentation
-Ability to communicate on various levels to include management, customer and associate levels
-Supervisory, leadership, management and coaching skills
-High-energy with an attention to detail

We are currently seeking candidates for Restaurant Manager for our Restaurant, Caf? and all other concessions located in the Franklin Institute. The restaurants serve a broad demographic of children and adults.
Responsibilities include but are not limited to: Hands on managing day to day operations; recruits, schedules and trains personnel at highest level for the job; flexibility with working long hours that comes with managing a 7 day a week operation; the ability to do whatever it takes to get the job done; excellent organizational skills and people skills; ability to look at all moving parts and cross-schedule and train labor; continually improving and tightening operations; developing new ways to increase sales and capture rate.
You must have: Strong POS knowledge especially for reporting purposes Strong customer service and leadership skills Excellent communication skills Strong computer skills in Excel, and Word, especially 3-5 years food services experience in a high volume institution High-energy and attention to detail Math skills
