|Position Description:||About the Role:|
An exciting opportunity has arisen for a talented Head Chef to join our Pier Chic Restaurant. In this role, you will be responsible for the creation of a distinctly different and highly creative contemporary fish and seafood restaurant with the highest level of authenticity, innovation, quality, consistency and profitability.
Your main duties will include:
Creating, defining and positioning the Pier Chic product.
Upgrading the Brand/Restaurant SOP Manual; detailing standards of Performance, Policies and Procedures pertinent to the efficient operation of the front and back of house in accordance with Jumeirah Group Food and Beverage policies & Municipality requirements.
Guiding the team in menu planning and design; ensuring consistently exceptional quality in food production and exceeding guest expectations.
Liaising with Purchasing to ensure prompt and efficient purchasing, issuing of supplies, stock control and inventory control.
Building and maintaining strong relationships with suppliers.
Making recommendations to the Group Culinary Director for modernization of equipment, production methods and presentation to improve guest satisfaction.
Assuring HACCP and Food Safety compliance.
Communication with the press and attending show-cooking events when appropriate.
Planning and implementing effective culinary promotions and events.
Building an efficient team of colleagues by taking an active interest in their welfare, safety, training and development.
In order to be considered for this role, you will have an internationally recognized Culinary qualification and you should have a minimum of five years of international experience working within a free-standing Restaurant, with a particular focus on fish and seafood cuisine. In addition, you should have experience of running fine dining restaurants, large volume venues and have worked in a Michelin Star environment. You should be well versed in culinary concept and menu development.
This is a very "hands on" and demanding position so it is paramount that you work well in a team but are also able to set standards and lead by example at all times. You must be comfortable working under pressure and be passionate about producing cuisine of the highest possible standards.
It is also essential that you have good command of the English language (spoken and written) and you should be proficient in Microsoft Office applications.
