The Bench Restaurant, the newest restaurant developed at The Lodge at Pebble Beach, has an immediate opening for a Chef de Cuisine.
Our menu is created with an emphasis on local seasonal ingredients, using only the freshest and most sustainable products available.
The Bistro style setting is anchored by the wood burning ovens which is surrounded by the spectacular bar and view of the 18th hole at Pebble Beach.
Known for its' creative pizza's, flat breads and sustainable products, The Bench offers one of a kind culinary experience.
This is a working chef position for someone who has a vast knowledge of local ingredients. They must be able to manage and train staff to Pebble Beach Company standards. This position requires a chef who would be available to work long hours and a variety of special events like the Pebble Beach Food & Wine, Concours d?Elegance, and AT&T.
A menu tasting is required.
Responsible for profitable financial management, effective leadership, excellent customer service skills, and supervision of department. Assist Executive Chef with developing menu items, menu matrix and standardized recipes while managing food and labor costs as well as assisting the Executive Chef with any departmental initiatives.
Graduate of an accredited culinary program or apprenticeship under highly respected chef at a premier restaurant preferred. Knowledge of all stations. Broad knowledge of varied cuisines and ability to integrate regional and seasonal ingredients to menus. Seven or more years of restaurant, resort or hotel experience with a minimum of two years full responsibility as a Sous Chef required.
-5+ years upper level dining - 2 years as a Sous Chef / Chef de Cuisine experience.
-Graduate from accedited culinary school.

-Knowledge of culinary trends.
-Creative, innovative culinary presentation.
-Wine pairing knowledge.
-Strong financial background.
-Eatec/Cost Control experience.
