Sous Chef - Pelican Grill Restaurant, The Resort at Pelican Hill

Position Description:The primary responsibilities of the Sous Chef include:

Plan, prep, set up and provide quality service in all areas of restaurant production to include, but not limited to all menu items supplied by outlet kitchen; ensure all mise en place is completed to satisfaction of set standards; ensure each employee will be able to follow established recipe and plating guide provided, to exact specification. Maintain and contribute to a positive work environment.

Verifies that all scheduled staff is present and signed-in.

Completes requisition of all food items needed daily from the food storeroom in concert with all cooks.

Supervises all employees during the set-up, service and breakdown for each meal period.

Verifies the taste and presentation of food produced prior to meal periods.

Follows all control and key procedures.

Communicates and delegates the production schedule for the day, collating quantities to be produced from the forecast and for the next day's banquet function sheets.

Expedites orders on the line.

Inspects and supervises the sanitation and maintenance of equipment.

Ensures that proper work orders are made to repair kitchen equipment.

Assists in control of labor and food costs.

Ensures training is occurring on an ongoing basis with all employees.

Assists in discipline and motivation for employees.

Performs daily storeroom inspections of all walk-in refrigerators to ensure that proper rotation of food is done.

Assist the storeroom Receiving Clerk in reviewing the quality of goods received.

Reviews the refrigeration areas of the kitchen and store rooms to ensure the proper usage of merchandise.

Assumes responsibility for the quality of food prepared in the employee cafeteria and the supervision of cafeteria staff.

Informs and keep the Executive Chef up-to-date on problems and irregularities and recommends courses of action.

Monitors and controls the food cost by creative menu planning, keeping waste to a minimum and low pars.

Assists in the development of a safe and clean working environment.

Ensures kitchen employees are storing foods properly.

Assumes full responsibility in the absence of the Restaurant Chef.

Participates in the scheduling and performance evaluation of kitchen employees.

Responds properly in any hotel emergency or safety situation.


Ability to perform job functions with attention to detail, speed and accuracy.

Ability to prioritize, organize, delegate work and follow through with assigned tasks.

Ability to work well under pressure of meeting production schedules and timelines of food displays.

Ability to handle multiple tasks at one time while maintaining a high level of professionalism.

Ability to work well with others in a team environment.

Contribute to the growth and success of the team.

Ability to direct performance of kitchen staff and follow up with corrections where needed.

Ability to motivate kitchen staff and maintain a cohesive team.

Ability to use all senses to ensure quality standards are met.



5 years experience in culinary field.

Ability to communicate effectively with guests, co-workers, and management.

Ability to compute basic mathematical calculations.

Ability to work all stations on line.

Food handling certification.

Knowledge of food cost controls.

Knowledge of high-end Northern Italian food.

Knowledge of food cost, menu costing, pictures, menu description in detail.


Culinary degree.

Sanitation certification.

Luxury Hotel/Forbes 5 Star experience preferred.
