Executive Steward is responsible for maintaining a sanitary environment for the food preparation and storage areas. They monitor and train, schedule and supervise all of the stewarding department staff. Knowledge of kitchen equipment, food productions, sanitation and safety is a requirement of the position.
They will ensure sanitation standards and cleanliness in all food areas. Maintain proper cleaning operation of dish machine.
Perform special deep cleaning as assigned
Ensure proper set-up, breakdown and maintenance of the buffets and banquets. Hire and train new stewards as required.
Ensure that floors are swept and mopped. Keep floors clean and dry, spills are picked up immediately using wet floor signs, dry rags, dry mops.
Clean walls, tables, racks, sinks, floor mats and disposal area.
Clean ovens, hoods, filters, drains, hot boxes, steam tables, flat boxes and ceiling vents, according to schedule or as specified
Ensure all trash is emptied at end of shifts, containers washed out and returned to kitchens.
Cooperate with kitchen and food and beverage staff about their needs to ensure that guests are taken care of promptly and professionally
