As a Lead Baker, you will prepare and bake high quality goods that are consistent with Whole Foods Market?s quality standards. Supports the Bakery Team Leader and Regional Coordinator in maintaining regional standards. You will ensure a positive company image by providing courteous, friendly, and efficient service to customers and team members.
DUTIES: -Make sure the customers are being taken care of and the store looks great at all times. Surprise and delight the customers with consistent, delightful service. -Mix, divide and shape dough and bake bread. -Communicate daily production schedule with bakers. -Accurately record times and temperatures of mixes. -Accurately proof and retard bread. -Keep bakery and equipment clean. -Coordinate ordering products. -Producing in-house and bake house goods, receiving and preparing product and maintain the bakery area and selling the product. -Control labor costs, Inventory and food cost control. -Maintain highest quality and consistency standards. -Communicate daily needs of bakery to leadership. -Mentor bakers to create future leaders. -Ensure accurate recording of mixing, shaping and proofing/retarding temperature and time information. -Ensure timely division and resting times. -Ensure consistency in daily production, i.e. baguettes are always the same length, bread is not burnt. -Constantly assesses and maintains consistent high quality of breads and is able to modify recipes as needed. -Adhere and insure all organic production guidelines are followed. -Bake the finest bread possible! -Follow and comply with established procedures, including Weights and Measures, health and sanitation, and adhere to safe work practices. -Operate and sanitize all equipment in a safe and proper manner. -This job posting is intended to describe the general requirements for the performance of this job. REQUIREMENTS: -Minimum three years artisan baking experience. -Exceptional communication and organizational skills. -Good working math skills (ability to do "on the fly math") with thorough understanding of Bakers Percentage. -Ability to take and give direction. -Ability to work under pressure and meet deadlines. -Ability to follow instructions and established uniform procedures related to duties and responsibilities. -Basic reading skill sufficient to read and understand recipes and information about ingredients. -Troubleshoot production issues and problem solve. -Understand the importance of all waste, spoilage and transfers to department. -Ability to learn proper and safe usage of steam kettle, hot plate and Hobart mixer (must be 18 years of age or older) -Ability to work box bailer (must be 18 years of age or older). -Available for flexible scheduling to meet the needs of the department
