Conduct daily meeting for staff and attend Food and Beverage meetings as well as pre-con meetings.
Managing day-to-day operations including dining room set up, proper daily staffing levels, reservations, daily specials, supply levels and restaurant environment (i.e.: music, lighting, etc?)
Responsible for scheduling, recruitment and interviewing for new colleagues. Ability to train and develop colleagues to become more efficient. Conduct monthly departmental meetings.
Ensure all Restaurant and Bar Service Standards (Departmental LQE's) are upheld, such as guest acknowledgement and recognition, recording of all guest preferences, and proactively offering alternatives or solutions during service if necessary.
Ensure all restaurant guests are visited during or after the meal, to ensure satisfaction and make conversation relevant to the individual guest. Ensure company Mission Statement, LQE's, and Guiding Principles are energized ad implemented.
Manage, coach and counsel staff of 40 in total, approximately 15 per shift, including disciplinary procedures. Uphold and enforce all hotel policies and procedures as stated in hotel colleague handbook.
A minimum of 5 years experience required in general management of a fine dining restaurant.
Fluency in English is required (both written and verbal); fluency in a second language is preferred.
Must be computer proficient to include MICROS, Microsoft Excel, Word, Office, Power Point, etc.
Must possess extensive and demonstrated wine, beer and beverage knowledge; must possess varied and extensive service industry knowledge.
Must be willing to work a flexible schedule in order to accomplish all major responsibilities and tasks.
Must be a self-motivator and motivator of others.
Must work in a safe, prudent and organized manner.
Must have ability to relate to all levels of management.
Must have the ability to handle multiple tasks at one time.
Must have superior organizational skills.
Bachelor's degree in hospitality or related field is preferred.
Must have excellent communication, guest relation and interpersonal skills.
Prior experience with a unionized work force is preferred.
Must be able to physically meet the demands of the position, including standing/walking for extended periods of time.
