Basic Job Function: Perform all functions of the butcher shop and to uphold and ensure compliance with all company and departmental policies and procedures.
-Minimum three (3) years experience in similar role in the hospitality industry
-Appropriate Culinary qualification

-Assist in the responsibilities of maintaining costs and budgeted numbers as outlined by Supervisor
-Assist in the maintenance, safety and sanitation practices for the Butcher Shop and Meat Storage
-Perform proper and safe use of knives, cleavers, electric saw, electric slicer, vacuum machine, patty maker, meat grinder and other equipment
-Perform receiving, storage and rotation of product
-Responsible for Butcher Shop production
-Report equipment break down and safety concerns to Supervisor
-Identify meat and quality level of beef, veal, pork, lamb, fish, poultry, game, shellfish and mollusks
-Portion, cut, trim and grind meat, fish, poultry and/or game
-Break down market cuts of pork, lamb, veal, game, poultry and/or fish
-Identify and have hands-on knowledge of portion control
-Assist in waste control, quality control, production methods and sanitary conditions
-Maintain the Butcher Shop in a clean and orderly fashion, conforming to all health department rules and regulations
-Clean, tag, rotate and store meats, fish, game and/or poultry
-Prepare returned meats into reusable cuts for future use to prevent loss of product
-Maintain a thorough knowledge of current guest services, activities, dining options, shops, local attractions, and historical information regarding Sea Island and the surrounding area to answer any questions guests may have to the best of one's ability
-If applicable, complete a Guest Problem Resolutions (GPR) form on any issues (solved or unsolved issues) and follow-up on issues as needed (if computer access is not available give information to admin support)
-Maintains cleanliness and organization in all work areas
-Uphold appropriate departmental standards of quality/timing
-Uphold and ensure compliance with all company and departmental policies and procedures
-Report all equipment problems and maintenance issues, known safety hazards, or unsafe practices and procedures to supervisor immediately
-Attends all scheduled employee meetings and brings suggestions for improvement
-Willing and timely execution of other duties as delegated by leadership
