Head Pastry Chef wanted for super busy neighborhood institution Lula Cafe in Logan Square, Chicago. Pastry Chef duties include managing a staff of 4-6 and interns, conceiving/preparing both the daytime and dinner pastry menus, plus brunch items and pastries. Must be highly skilled and experienced at creating composed plates as well as preparing baked goods, ice creams, and seasonal fruit jams and jellies. New menus items are tested and explored each week. The menu is constantly changing, ever progressing.
In the cooler right now, for example, are these items:
Mast Brothers Chocolate, cream from kilgus dairy, anise hyssop, 5 types of edible flowers that we grow on site, black raspberries from Klug Farm, cherries from Seedling, dill seed that we grew, too, apricots and peaches, housemade butter, smoked pecans, burrata, sweet cicely, sweet soft fromage blanc. . . . .
