SUMMARY The Pastry Chef is responsible for the dessert menus (development and execution) for each restaurant, fast food outlets, and all catering events including Sunday and Holiday Brunches. Must be able to successfully perform all duties listed below in a manner that coheres with the vision of Sundance.
ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned. Develops new desserts and pastries for all Food & Beverage outlets. Coordinates production and supervises all activities of pastry department. Gives instructions to baking personnel in fine points of pastry making and sanitation practices - ensuring these practices are followed on a daily basis. Works closely with Executive Chef, Banquet Chef, Tree Room Chef, Foundry Grill Chef, the Deli Manager, and the Sales staff for any and all function changes within the department. Responsible for par levels of all pastry ingredients. Observes all food storage areas to ensure proper rotation and freshness of all food on hand. Oversees and participates in production of cookie dough, crusts, muffins, sweet breads, restaurant and banquet desserts. Receives inventory orders and rotates them to proper areas. Assists in monthly inventory of food to ensure accurate food cost. Attends weekly chef?s meeting. Gives daily skill development training to staff. Prepares baking work schedule and posts each Wednesday Responsible for departmental labor on a daily basis and to control overtime. Assists in opening and securing the kitchen. Ability to create new amenity ideas, perform accurate inventory, and demonstrate desserts in front of public. Responsible for setting a good example and ensuring staff abides by safety, sanitation standards, practices, and applicable laws. Responsible for tracking, documenting, and ensuring all kitchen staff have appropriate certification, licensing and training according to Sundance Policies and State and Federal Laws. Exhibits exceptional organizational and communication skills. Must be willing and able to promote Sundance through media interviews, cooking demonstrations and charity events Provides education and training to both kitchen staff as well as service staff
