We are currently seeking a Sous Chef for the ARAMARK opearations at the Ross School of Business at the University of Michigan in Ann Arbor.
The Sous Chef is the second in command in the kitchen and generally is in charge of food production. The Sous Chef ensures that all food production workers are performing their duties as prescribed by the quality standards established by the Executive Chef.
Plans and organizes production schedule for all kitchen production.
Supervises kitchen mise en place (preparation for service) of all stations.
Responsible for all production records.
Supervises and performs the production of all food items.
Communicates with Production Manager/Chef on items for next meal period.
Communicates with Chef and/or PM shift supervisor on appropriate usage of all products.
Responsible for maintaining all sanitation guidelines in all aspects of food production/handling.
Responsible for proper rotation of all products in the freezers and coolers, and maintaining these areas on a daily basis.
Familiar with the use and operations of ARAMARK?s Eight-Step Production System.
Assists the Chef with administrative duties on a needed basis.
Additional tasks and responsibilities may be assigned at the discretion of the manager. Tasks and responsibilities may be added or revised based on the volume of business and the need for the work to be completed at the present time.
Follows ARAMARK policies and procedures and safety and sanitation policies and procedures and insures compliance with these policies and procedures.
May be required to work nights, weekends, and/or overtime.
