Renowned as Kentucky's premier hunting resort, Deer Creek Lodge is seeking a Seasonal Executive Chef for its culinary operation located in Sebree, KY. Deer Creek Lodge provides some of the finest upland game bird, waterfowl, and trophy whitetail opportunities and bass fishing in North America.
The Executive Chef will lead all food and beverage operations for Deer Creek Lodge for the months of September through March. The Chef will hire supervise, train, and work with Sous Chef to prepare 3 high quality meals daily for up to 25 guests.
Responsibilities include, but are not limited to:
-Leads and directs all front and back of the house operations
-Creates innovative yet familiar menus using locally sourced products whenever possible
-Design menus to maximize product utilization thus minimizing waste
-Implement cost control measures to ensure profitability of the F&B program
-Create 3 delicious meals daily from scratch
-Oversees all equipment maintenance and new implementation of a preventative maintenance schedule
-Exceeds sanitation standards
-All ordering of food and beverage items, with emphasis on locally sourced products
-Maintains proper inventory levels based on established pars
Requirements and Qualifications:
-Culinary Degree preferred and at least 5 years of progressive culinary experience, private club experience a plus.
-At least 2 years experience as a Sous Chef or higher.
-Experience cooking from scratch using a blend of modern and classical techniques.
-Passionate, hands-on and enthusiastic leader, team player.
-Excellent verbal and written communication skills.
-Creative and innovative culinary skill set, with a strong foundation of classical technique.
-Ability to manage a great food and beverage program.
-Competitive salary commensurate with experience.
