As the owner and operator of Booker's Backyard in Ithaca, New York I am looking for a culinary partner to lead my kitchen and direct culinary operations. I'm looking for a true professional to help me expand on the foundation that I have built. I need a business partner who can design soulful dishes that are rooted in tradition but remain current and contemporary in their artistry, composition and execution. The ultimate goal is to make the restaurant a landmark upscale gourmet bourbon-braised barbecue joint and seafood shack that is renowned for the quality and originality of its food.
At the heart of it all I need an educated well-trained chef who loves to cook and lead people. Someone with the smarts and desire to calculate, on a daily basis, our food and labor costs. I need a chef with a history of leading profitable restaurants who will take charge and be a great coach, creator, communicator, teacher, trainer, mentor and leader.
Successful candidates will have strong family values as well as obvious character and integrity. He or she will be a good friend and enjoy the pace and natural beauty that life in the Finger Lakes provides. In the kitchen, the chef will be organized, efficient, fast and easily respected. He or she will display an even temperament and poise while orchestrating the chaos that can be a busy kitchen. As a culinary partner there will be an abundance of public interaction and it is expected that the chef will be intelligent, neat, witty, articulate, funny and well versed in the culinary arts. The perfect candidate will possess a certain swagger that is balanced by a humble confidence and an ounce of insanity.
From a technical stand point the chef will need to be a frugal shopper/purchaser and be obsessive about finding the best price for our ingredients. The chef must have proven methods for producing and managing inventory sheets, order guides, prep lists and standardized recipes. He or she must be an expert in cross utilization and waste reduction. Above all else the chef must have a love for pigs, smokers, mac and cheese, lobster, bourbon, ham, clams, bacon, ribs, grits, greens, corn, catfish, meatloaf, shrimp, short ribs, smoked salt, fresh fish, good burgers, beets, pot pie and fried chicken.
Perched above the eastern shore of Cayuga Lake in Ithaca, New York Booker's features an extraordinary backyard that has nearly eighty seats and summer sunsets that are incredible. It is expected that the restaurant will quickly become the premiere location for outdoor dining. Ithaca is known as the home of Cornell University and Ithaca College. The college population brings a wealth of cultural diversity to the community. The public schools are fantastic and the local economy is regarded as one of the best in the country.
The total compensation package for this position will consist of a base salary with extensive weekly and monthly incentive based bonuses. After twelve months the package will include tenure based profit sharing and potential long-term inclusion of ownership rights.
