About the Brasserie
The Brasserie is a privately owned 80 seat fine dining restaurant with busy adjoining Market (upscale lunch space and coffee shop) on Grand Cayman Island. It is a well established restaurant with a loyal and very discerning clientele, and a fantastic reputation on the island. The restaurant features a recently built state-of-the-art exhibition kitchen, along with an adjacent organic garden.
The culinary concept for the Brasserie Restaurant is guided by chef Dean James Max of DJM restaurants, a James Beard recognized chef, who has been with the Brasserie for over 6 years.
About the Position
The Pastry Chef will assist with the daily operations of the kitchen. They will be required to prepare home-made high-end pastries for the Brasserie Restaurant's a la carte dessert menu, as well as home made breads and pastries for the Brasserie Market, including muffins, cupcakes, cookies, breakfast breads and traditional local desserts. The Pastry Chef will be expected to ensure that all recipes, food preparations and presentations meet the restaurant's specifications and commitment to quality. They will also be required to maintain a safe, orderly and sanitized workspace. This position will report directly to the Executive Chef.
The ideal candidate will be energetic enthusiastic, able to handle stressful situations and flexible. Previous experience in luxury or fine dining establishment is absolutely essential. Candidates must have strong communication and organizational skills and the ability to effectively work with a diverse staff. A minimum 2 year commitment is required.
