The Cordova Casino and Restaurant is looking for an experienced Kitchen Manager!
The Kitchen Manager will be responsible for the daily operations of the kitchen, and provides professional leadership and direction to kitchen personnel. Ensures that all recipes, food preparations, and presentations meet restaurant's specifications and commitment to quality. Maintains a safe, orderly and sanitized kitchen and demonstrates this by example, using proper food-handling techniques.
-Prepares daily production list.
-Ensures that all stations remain stocked before and during the meal period.
-Verifies that kitchen staff follows all recipes, presentation guidelines and portions servings correctly according to recipes developed and approved for the restaurant.
-Manage waste through correct product measurement and management of inventory.
-Keeps kitchen, dish, and storage areas clean and organized.
-Manage all kitchen-related office administration and kitchen vendors.
-Places food and supply orders needed for meal preparation.
-Receives product be verifying invoice and freshness of merchandise.
-Evaluates food products to assure quality standards are met.
-Schedules and coordinates the work of cooks and other kitchen staff to assure that food preparation is economical and correct within budgeted labor cost goals.
-Manages staffing levels throughout shift.
-Perform Open/Mid-Day/Closing duties.
-Projects weekly food and labor costs and monitors actual financial result. Takes corrective action as needed to assure financial goals are met.
-Attends food, beverage and management staff meetings.
-Consults with the F & B Manager regarding food production for special events.
-Cooks or directly supervises the cooking of items requiring skilled preparation.
-Puts procedures in place to assure smooth running kitchen at all times. Makes sure these procedures are adhered to at all times.
-Prepare and receive orders of food and beverages, utilizing judgment to increase or decrease on peaks in business, large parties and promotions.
-Conduct weekly inventories to ensure that proper levels are stocked and to assess ordering patterns and changes.
-Monitor and validate daily prep production.
-Performs additional responsibilities, although not detailed, as requested.
-Develop, execute or assist in projects as directed or initiated due to the needs of the business.
Education: College or culinary training or extensive cooking and production experience.
Experience: A minimum of two years working in management required. A minimum of 2 years working in a food preparation position, with beverage responsibilities for a minimum of one year also required.
-Must be able to pass mandatory screening, including a credit and background check and drug test.
-Must be at least 21 years of age.
-Must possess a California Food Handler Card and have awareness of local, state and federal health and sanitation laws.
-Able to work varied shifts and flexible schedules.
-Basic math skills.
-Excellent guest and Team Member relations skills including knowledge of basic training techniques.
-Commitment to quality service, and food and beverage knowledge.
-Understanding of proper use and maintenance of major kitchen equipment, including stoves, refrigeration, slicer, knives, and dish machine.
-Proficiency in the use of Microsoft Excel, Word and Outlook. Working knowledge of MICROS and Compeat preferred.
-Professional communication skills, oral and written.
