We are looking for a Chef de Cuisine
Specialty Chef de Cuisine is responsible for the daily operations of the Final Cut steak house including supervision of staff and maintaining margins and expectations as outlined by the Food and Beverage department
ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned.
Train and orient all culinary employees, including the development of training agendas and materials.
Implementing and overseeing Food & Beverage Department policy and procedures relevant to all aspects of kitchen operations.
Ability to keep up with market trends in food and beverage.
Must possess computer skills necessary to complete daily reporting functions.
Responsible for menu design, recipe development and training of all new items.
Responsible for overall cleanliness, sanitation and safety of all work stations within the Final Cut.
Responsible for overseeing proper ordering, receiving, storage, rotation and pars for food items within the Final Cut.
Responsible for maintaining consistent food specifications, including: taste, appearance, presentation, portion control and quality.
Responsible for working within budgetary restraints in order to achieve set costs and margins.
Works closely with front of the house manager to insure wait staff is given proper training and knowledge of all dishes.
Possess clear communication skills with all employees and guests.
Directly supervises up to 10 employees. Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems. Must be available to work a variety of shifts, weekends and holidays.

EDUCATION and/or EXPERIENCE
Two years experience in a culinary management position. Must possess extensive Culinary knowledge in multiple cuisines including Fine Dining ala carte experience in a high volume facility and excellent leadership and management skills. Must possess budget development, scheduling and cost control skills.
