Position Description:
This position is responsible for managing food production, quality, and presentation in all dining areas and for safety/sanitation in the kitchens.
Job Functions:
-Managing food preparation, sanitation, and safety in the kitchens.
-Hiring, training, scheduling, and coaching/counseling staff -Overseeing stewarding and sanitation.
-Preparing profit plans, forecasts, and financial analyses for all culinary operations.
-Establishing pars and controlling inventory of china, glass, silver, kitchen equipment, and rolling stock.
-Designing recipes and plate presentation.
-Maintaining desired food and labor costs.
-Soliciting feedback from guests regarding product quality and delivery.
-Maximizing revenues and profits through proactive marketing strategies.
-Participating in division meetings and conducting regular department meetings.
Basic Qualifications: -Must be at least 18 years of age or older.
-Must possess a valid Driver's license.
-Minimum (8) eight years experience in managing food preparation.
-High school diploma or equivalent required.
-Minimum (3) three years supervisory experience at an Executive Chef level or above with banquet and/or convention center experience.
Additional Qualifications:
-Degree in Culinary Arts preferred.
-ACF Certification a plus.
-Management of labor and food cost in a multiple outlet property.
-Proven employee/guest relations, coaching/counseling, communication, and organization skills.
-Experience with creation of menus for various restaurant concepts and banquet venues.
-Knowledge of POS systems, purchasing systems, and computer systems.
-Professional image representative of property image.
Working Conditions:
-Physical requirements include considerable standing, bending, reaching, lifting up to 50 lbs., eye/hand coordination, finger dexterity, communicating verbally, and working in extreme temperatures.
-Schedule will vary according to operating needs, but includes evenings, weekends, and holidays.
