Description
The Catering Kitchen Director will run the catering kitchen and prep areas leading up to and throughout the entire event. This role will include overseeing the prep for chef demonstrations, hands-on savory and pastry workshops with ICE and support the exhibitors in the Chef Product Fair. This position reports to the Events Director.
Responsibilities
Prior to Event
- Staff catering kitchen - Orient kitchen staff prior to event - Leading up to event, work with Demo Coordinator to create chef prep schedule for all kitchens (catering, pastry prep and main stage kitchen) - Review chef presentations and assess equipment, ingredients and timing needs - Help design and equip kitchens with Trimark (kitchen designers) - Review StarChefs kitchen inventory and determine additional equipment needs with Demo Coordinator - Source kitchen needs as needed - Support chef presenters with prep leading up to event - Put in place all kitchen policies and procedures and ensure safeguards for accidents and theft
During Event
- Help set up kitchens and prep areas during move-in - Check in equipment and ingredients as they arrive to event venue - With kitchen staff, organize fridges and freezers and label all supplies by workshop, competition or main stage demonstration - Oversee cleaning crew to ensure the kitchens and prep areas are spotless morning and night - Ensure grey water is controlled throughout entire event - Educate sponsors regarding water situation and monitor their use - Oversee kitchen staff scheduling during event - Direct catering kitchen staff throughout event (and move-in/out) - Oversee culinary volunteers when applicable - Work with ICE to prep for all workshops with presenters - Resolve any problems that arise in the kitchen and prep areas during the event - Meet and greet chef presenters backstage - Help ensure timing of demos - Responsible for locked cages (open in the morning and locked at the end of the night) - Ensure that equipment and ingredients don?t ?walk? during the event. Ensure the equipment cages are locked at the end of the night - Work with ICE to coordinate prep for demos, control inventory and maintain flow in workshop rooms. - Ensure all food is removed from equipment, fridges, freezer, and kitchen and disposed of appropriately - Responsible for the cleanliness of kitchens and prep areas during event, especially during move-out - Direct extra kitchen cleaning crew during move-out
Qualifications
- Fine dining and multi-unit experience a must - Culinary degree is preferred - Min five years of chef experience is required - High volume catering experience is a bonus - Safe Serv Certified
