Cuba Libre is looking for a talented Executive Sous Chef for our location in Washington DC.
Experienced in kitchen management, staff development and high quality production & supervision is required.
The ideal candidate will be energetic and passionate. Previous experience in upscale/high volume fine dining is required.
Also, applicant must have hands on management style with strong communication and organizational skills and the ability to effectively manage and motivate a diverse staff. Candidate should have at least two to three years of Sous Chef experience and Culinary School graduate or equivalent experience.
Reporting to the Concept Chef Partner, Guillermo Pernot, and the General Manager.
Will have culinary management responsibilities for all day to day food operations to include food production, ordering/receiving, accounting, budgeting, facilities, and personnel. The Chef will be responsible for bottom line results.
Specific responsibilities in the short term include, but are not limited to:
Staffing, development and management of the daily operation.
Long term- The Executive Sous Chef is totally responsible to assist in the goings on for the entire back of the house operations. This includes, but is not limited to, the following:
1. Kitchen policies and procedures 2. Staffing requirements for all meal periods 3. Payroll guidelines 4. Training schedules and training of all sous chefs and key and hourly kitchen employees 5. Development of external menus for off premise events 6. Sanitation both inside and outside of the property 7. Adhering to food cost guidelines
Must be an outstanding leader and manager. One who is firm, but fair and one whose work ethic and passion for the business is contagious throughout the organization One who has a passion for detail, as well as remarkable creativity. A team player and an excellent communicator.
