Executive Sous Chef
Ridgewells is seeking an Executive Sous Chef who will be responsible for assisting in the management of its high quality/high volume production kitchen. Responsibilities include, assuring that foods within departments are prepared in an organized, efficient and timely manner, providing hands-on assistance, assisting the Executive Chef in menu planning, preparation of budgets, payroll management, and food cost controls. Other duties include, executing client menu tastings, taking part in the responsibilities of Events Kitchen Management, participating in the training of Event Designers and kitchen staff, maintaining recipe standards to ensure that food is produced to specification, scheduling kitchen employees to maximize efficiency and meet labor budgetary guidelines, maintaining food costs controls and other records and implementing company policies within food production departments. Applicant should have a degree from a post-secondary culinary arts training institute, at least five years of proven management record, strong interpersonal relations, and the ability to organize and prioritize work to meet deadlines.
