The Pastry Chef's primary responsibilities are to create, prepare and oversee all functions of the pastry department including menu development, inventory and purchasing of supplies, and cost control. Additional responsibilities include the creation of dessert menus and leading and directing the work of other pastry associates.
* Prepares cakes, pastries, cookies, pies, creams icings, mousses, sauces and batters used for hot and cold desserts and pastries * Estimates food requirements, orders food from suppliers, requisitions food and creates pars * Creates accurate recipes that include portion sizes, pricing and costing. * Ensures proper storage of all foods, including coverage, labeling, dating, and using the proper containers; maintains the appropriate temperature of all foods. * Collaborates with Executive Chef and Sous Chefs in planning and creating new pastries and desserts * Supports the Food Division's goals by making suggestions for product enhancement and kitchen associate development. * Effectively trains staff so that they are able to consistently provide service that meets the Hotel's Preferred/4 star/4 diamond service standards * Assists with interviewing and selecting staff; creates a work environment that minimizes turnover and maximizes retention * Holds staff accountable to the policies and procedures of the hotel * Supervises, directs, reviews and assigns work of Pastry Cooks * Coordinates with Banquets Chef and consults BEOs to prepare all Banquet pastries and desserts * Ensures pastry operation meets all Health Department requirements for sanitation; Keeps pastry areas clean, organized and sanitary
Requirements: Culinary School Diploma or Approved Apprenticeship and demonstrated ability to perform culinary techniques. 3-5 years of pastry experience. Has previously held a lead cook or Chef de Partie position preferred.
