Executive Chef - Las Vegas Convention Center

Position Description:Location (Las Vegas Convention Center):

The Las Vegas Convention Center is one of the most modern and functional facilities in the world - a 3.2 million square foot facility located within a short distance of more than 100,000 guest rooms. Operated by the Las Vegas Convention and Visitors Authority (LVCVA), the center is well known among industry professionals for its versatility. In addition to approximately two million square feet of exhibit space, 144 meeting rooms (more than 241,000 square feet) handle seating capacities ranging from 20 to 2,500. A grand lobby and registration area (more than 225,000 square feet) efficiently link existing exhibit halls with new exhibit and meeting rooms, and allowing simultaneous set-up, break-down and exhibiting of multiple events. The Las Vegas Convention Center has also hosted the largest convention in North American history (ConExpo-Con/Agg 2008) and ranks #1 in as the facility that hosts the most "Top 200 events" in the convention industry annually.

Position Description:

We are currently seeking an Executive Chef to oversee all operations Las Vegas Convention Center including:

Business Development:
-Assist in development and implementation of new programs within component
-Implement marketing and new menu promotions with in component
-Consult with district executive chef to determine menu mix.
-Optimize food cost, labor cost, top line growth, and support culinary program.
-Work with risk manager champion to implement component or complex kitchen safety initiatives, such as HACCP, and product risk assessment procedures.
-Ability to work with the Regional Executive Chef to insure proper standards with the use of menu engineering, menu development and regional and local food trends.
-Maintain a consistent culinary developmental dialogue.


Resource Development:
-Responsible for implementation of culinary skills training programs within component
-Responsible for the development and execution of targeted culinary programs
-Responsible for execution of component recognition and reward programs
-Provide quarterly assessment of component or complex executive Sous chefs
-Recruit staff and utilizing regional chef schools, trade schools and local job fairs
-Develop Executive Sous Chef through one on one goal and objective outline
-Leadership development through career management


Candidate Qualifications:

Ideal candidates will possess an Associates or Bachelor degree and related culinary degree with 7-10 years of industry & culinary management experience. Our Executive Chef must possess the following qualities and experiences:
-AOS/BS in Culinary Arts or equivalent experience
-Minimum of 10+ years of industry & culinary management experience.
-Understanding, support and development of sustainable cuisine
-Experience in demonstration cooking
-Menu writing and development ability
-Organizational skills and ability to introduce or implement and execute S & E culinary program and brand development regionally
-Full P&L accountability and/or contract-managed service experience is desirable.
-Working in a Union house environment.
-Candidate should have unlimited relocation flexibility with the understanding of permanent placement within the West Region.
