|Position Description:||This position is responsible for food quality and presentation of all banquet meals at THE HOTEL HERSHEY, a world-class resort with 234 guest rooms and 25,000 square feet of meeting, banquet and exhibit space. The Hotel has been recognized with the prestigious AAA Four Diamond Award, Successful Meetings Pinnacle Award, Meetings & Convention Magazine Gold Key Award, and Corporate & Incentive Travel Award of Excellence. THE HOTEL HERSHEY is a member of Preferred Hotels & Resorts Worldwide, and Historic Hotels of America.|
The qualified candidate will supervise food preparation, sanitation, and safety in the kitchen; monitor food and labor costs; insure that food is properly rotated; create new menus; maintain positive guest relations by anticipating needs and responding promptly to requests; regulate compliance with the standardized kitchen audit; train and coach/counsel employees; assist in all areas as needed; conduct daily staff line-ups; complete necessary paperwork and closing duties; and attend designated meetings.
A degree in culinary arts is preferred with a minimum of 8 years experience in food preparation, including 2 years as a banquet chef or sous chef. Practical experience with Asian, South American, mid-Eastern, and classical French cuisine required.
Candidate should also have experience in a high volume food operation, proven leadership, motivation, communication, and organizational skills along with a professional image.
Schedule will vary according to operational needs, but regularly includes evenings, weekends, and holidays. Physical requirements include the ability to lift and carry up to 50 lbs., waliking, bending, standing 95% of the shift, and working in extreme temperatures.
