If you have an advanced degree in culinary arts and at least five years of experience in a four or five star fine dining operation, we invite you to explore our Chef De Cuisine opportunity. UPMC Corporate Services has an opportunity for a full-time chef de cuisine to expertly and creatively prepare and present meals for the UPMC Business and Corporate Events Department, located downtown Pittsburgh, PA. In coordination with the executive director of business and corporate events and the director of dining services, the chef de cuisine will direct, lead and manage menu development, specialty menu creation and culinary evolvement for all UPMC business and corporate events. This position is required to provide the highest quality of instruction, training and culinary expertise in terms of menu evolution for all special events and meals. Under the direct supervision of the executive director of business and corporate events, the chef de cuisine is responsible for all special events and daily menu conception and execution in collaboration with the dining service director. The chef de cuisine is a contributing member of the business and corporate events management team, working closely with management members to insure successful operation of the department and its functions.

Responsibilities:
- Maintain and lead a world class operation; focusing on the highest level of food preparation, menu selections, presentation techniques, service, communication and leadership
- Utilize local, seasonal ingredients focusing on organics, sustainability, bio-environmentalism and Health and Wellness
- Assure all meals are expertly prepared, presented and served consistent with five-star restaurants, hotels and senior executive level catering operations
- Maintain a sanitation program according to HACCP guidelines to ensure food safety and inspection
- In coordination with the director of executive dining services, maintain financial accountabilities and reach all budgetary goals
- Develop internship/ externship/ apprenticeship programs through local schools and industry networks
- In collaboration with the director of dining services, will perform, manage, guide and direct all functions associated with the kitchen operations in accordance with System wide competencies / behaviors
- Performs all other duties as assigned

Requirements:
- High school diploma
- Knowledge and an active practice of:
* From scratch cooking
* Strong knife skills
* Worldly, fine dining cuisine presentations
- Advanced degree in culinary arts with a minimum of five year?s experience in a four or five star fine dining operation with executive clientele
- Knowledgeable of fine dining foods, menus and presentation techniques
- In-depth knowledge of International cuisines and styles of presentation
- Strong proven leadership and ability to effectively communicate with all levels of individuals
- Ability to work with minimal supervision and exercise sound judgment
- Ability to work extended hours when required
- High level of professionalism and confidentiality
- Good command of the English language, including spelling, grammar and punctuation
- Good organizational and planning skills
- Servsafe Certification preferred
