StarChefs.com 2014 International Chefs Congress (ICC) will take place October 26 - October 28 in New York City and is one of the most exciting professional culinary events in the US. ICC is a three-day culinary symposium where more than 100 of the world's most influential and innovative chefs, pastry chefs, mixologists, and sommeliers present the latest techniques and culinary concepts to their peers. Play a key role at this year?s ICC!
The Executive Chef will oversee all culinary areas of ICC. This includes the Main Stage Cooking Demos, the Catering Kitchen that support the entire Trade Show Floor (Sponsor Booths and Eat@ICC), and all hands-on Workshops (in addition to Mixology and Tasting Room if needed). This position reports to the StarChefs Events Director.
Prior to Event
-Staff kitchen areas -All communication with kitchen staff leading up to ICC -Work closely with ICC Chef Coordinator to create prep schedules for all areas of kitchen -Review chef demos and access equipment, ingredients and scheduling needs -Review and assist with design and layout of kitchen -Review StarChefs kitchen inventory to determine what is needed at ICC -Source any additional kitchen needs as needed -Support chef presenters with any prep leading up to the event -Put in place all kitchen policies and procedures and ensure safeguards for accidents and theft
-Help set up kitchen and prep areas during ICC move-in -Check in all equipment and ingredients as they arrive to event venue -Organize fridges and freezers and label all supplies by area of ICC -Support presenters with prep on day of demos and workshops -Direct cleaning crew to ensure the kitchen and prep areas are spotless morning and night of ICC -Ensure grey water is controlled throughout entire event -Direct kitchen staff throughout event (and move-in/out) -Oversee culinary volunteers, when applicable (we will have a Volunteer Coordinator who is ultimately responsible for all volunteers) -Resolve any problems that arise in the kitchen and prep areas during the event -Meet and greet chef presenters -Help ensure timing of demos -Coordinate with StarChefs Marketing department to schedule sponsor needs -Responsible for locked cages (open in the morning and locked every night) -Ensure that equipment and ingredients don?t ?walk? during the event -Ensure all food is removed from equipment, fridges, freezers, and kitchen at the conclusion of event -Reach out to agreed on charity (prior to ICC) to arrange collecting any remaining ingredients at the conclusion of event -Responsible for the cleanliness of the kitchen and prep areas during event, as well as during move-out -Direct kitchen cleaning crew during move-out -Work with ICE to coordinate prep for demos, control inventory and maintain flow in workshop rooms. -Ensure all food is removed from equipment, fridges, freezer, and kitchen and disposed of appropriately -Responsible for the cleanliness of kitchens and prep areas during event, especially during move-out -Direct extra kitchen cleaning crew during move-out
Fine dining and multi-unit experience a must Culinary degree is preferred Minimum five years of chef experience is required High volume catering experience is a bonus Safe Serv Certified
The compensation for this position is $1,500 and requires approximately 10-15 days pre-ICC and onsite from October 24 ? October 28.
