Boka Restaurant Group's newest venture, a seasonally driven authentic Japanese restaurant, is seeking to fill ALL POSITIONS. We?re looking for a bar manager with excellent knowledge of wine, beer, spirits, and sake; a general manager with at least 3 years? experience; and most importantly, we?re also looking for highly experienced and authentic sushi and sous chefs with a deep appreciation, respect, and knowledge of Japanese cooking, food preparation, and culture. Salary for all positions is negotiable upon experience.
ABOUT MOMOTARO?S CHEFS:
Chef Mark Hellyar, who is serving as executive chef and partner, most recently worked as a corporate development chef for Starr Restaurants. Chef Jeff Ramsey, the head sushi chef, hails from the Michelin-starred Tapas Molecular Bar in Tokyo. Both Chef Hellyar and Ramsey lived and worked in Japan and are authentically dedicated to Japanese cuisine and have a deep appreciation for Japanese culture. Chefs Hellyar and Ramsey are searching for the best chefs in the city to join them at Momotaro.
Located at the corner of Lake Street and Green Street, Momotaro will sprawl over multiple floors. The main floor seats 130, alongside a sushi bar and a glass-enclosed robata bar. The cocktail bar sits in a two-story-tall space, with a full-height back bar reminiscent of an old Japanese brokerage board. Downstairs, a 30-seat bar shares space with an 80-seat izakaya, a Japanese after-work heavy-snacks bar. Momotaro will open in late July/early August 2014.
