JOB PROFILE:

The Pastry Chef will be responsible for the operation of the pastry department within the company. They will ensure excellent quality throughout the dessert offerings, supervise and coordinate all pastry and dessert preparation and, presentation, develop appropriate seasonal menu offerings, manage food cost controls to contribute to F&B revenue, plan production to facilitate daily requirements and ensure compliance with food hygiene and Health and Safety regulations.
This position may work individually as well as with externs to teach pastry experience.

STANDARD SPECIFICATIONS:

Create and follow standard recipes and cooking techniques. Act professionally. Follow all safety and sanitation standards

SKILLS AND QUALIFICATIONS:

Essential:

1.Culinary Degree in Pastry art/Culinary

2.A minimum of 3 years of experience as pastry supervisor/chef

3.An understanding of the front and back of the house kitchen operations

4.Good communication skills

5.Must be able to read standardized recipes

6.Must be able to organize and prioritize daily par sheets

7.Must be able to quickly assess situations, determine priority, create a strategy and implement it

8.Ability to multi-task

9.Excellent planning and organizational skills

10.Must be able to sustain a high speed pace, while staying focused on the smallest of details

11.Must take pride in being the final ?inspector? for our product, approving it before it goes to the guest

12.Ability to adapt procedures, processes, tools, equipment and techniques in order to perform the essential functions of the job

13.Must be able to understand and utilize Shore Lodge?s expeditor system

14.Ability to count, read and write in the English language

15.Excellent computer skills including experience using Microsoft products.
