|Position Description:||The Brasserie Restaurant and Market is currently accepting applications for the position of Pastry Chef. The Brasserie is located on Grand Cayman in the Cayman Islands. |
The Brasserie is a privately owned, 80-seat, fine dining restaurant with busy adjoining Market (upscale lunch space and coffee shop) on Grand Cayman Island. It is a well established, reputable, restaurant with a loyal and very discerning clientele and enjoys a fantastic reputation on the island. We grow much of our own produce in our organic garden adjacent to the restaurant; use eggs from our own chicken coop with fish caught on our own fishing boats. We take local and sustainable very seriously and special attention will be given to applicants with experience that suggests the same.
The culinary concept for the Brasserie Restaurant is guided by Chef Dean James Max of DJM restaurants, a James Beard recognised chef, who has been consultant to The Brasserie for over seven years.
The successful applicant will:
- Be a culinary school graduate;
- Have experience in a high volume restaurant;
- Have previous fine dining pastry experience;
- Be well organized and able to effectively manage his/her workspace;
- Have excellent time management skills and the ability to prioritize tasks;
- Be energetic, enthusiastic and able to work well under pressure;
- Be able to work cohesively with coworkers;
- Able to adjust to a new environment and the Caribbean culture;
- Be eager to learn;
- Enjoy weekends off;
- Enjoy a tax free salary in the Caribbean with first-world amenities
The Pastry Chef is required to prepare homemade, high-end desserts for The Brasserie Restaurant's a la carte dessert menu, as well as homemade breads and pastries for the Brasserie Market, including muffins, scones, cupcakes, cookies, breakfast breads and more. The Pastry Chef will be expected to ensure that all recipes, food preparations, and presentations meet the restaurant's specifications and commitment to quality. This position will report directly to the Executive Chef.
