|Position Description:||J's Restaurant at Nashoba Valley is an upscale dining venue located in Bolton, Massachusetts. As one of the few Zagat rated restaurants outside of a metropolitan area, J's is known for its quality has built a reputation of being one of the best dining venues in Massachusetts. Featured in the Boston Globe, Yankee Magazine, Chronicle, and hundreds of publications we are looking for a candidate that will continue and build on our success and excellence.|
J's at Nashoba Winery is a small intimate dining experience with service in the evening from between 30 to 90 covers, lunch from 20 to 60 and Sunday Brunch from 100 to 250, private functions and weddings for 30 to 180. As a small farm house restaurant, the Executive Chef at our restaurant is involved with every aspect of planning, preparation and service. Our staff consists of only 4 to 5 chefs and approximately 70% of Executive Chef's time is spent in the kitchen working directly with preparation and service. We are looking for a chef that is capable of showing a passion for and interest in everyone's development that is willing to make the effort necessary to create a great work environment. In the last 15 years we have only had two Executive Chefs because we believe in allowing our Executive Chef the creative freedom necessary to stimulate their passion but in an environment built on dedication and professionalism. Also, it is important to understand that our Executive Chef's pay scale has been from 50k to 70k including financial incentives based on results. While the pay scale will move with results, we expect to see and be able to maintain the results to justify the increase. We unfortunately cannot compete with the pay scale offered in New York or Boston but we also do not have the cost of living or the hours of operations required of City operations. Please do not apply unless you meet all of the qualifications noted below and understand the scope of our operation.
-Supervise and participate in the production, preparation and presentation of all food
-Adopt human resource standards in the production and preparation areas of the kitchen in order to attract quality talent, retain and motivate all employees while providing a safe work environment.
-Schedule, train, develop, empower, coach and counsel, resolve problems, provide open communication, and participate in administering discipline as appropriate.
-Ensure that all local Board of Health, sanitation and safety standards are met.
-Monitor and control all labor, food and beverage costs through scheduling, training and supervising the staff.
-Oversee the production of the food to ensure budgets are met/exceeded while quality is maintained / improved.
-Take responsibility for all food ordering.
-Create and plan all menus
-Develop and be accountable for a safety culture that creates a work environment where no one gets hurt.
-Achieve/exceed guest satisfaction benchmark.
-Preference for a Chef that is within 90 miles of Bolton and willing to re-locate.
-Must have minimum two-year culinary certificate from accredited school or have related experience such as apprenticeship.
-At least 6 years experience in fine dining and possess a proven record and references
-At least 2 years experience in management as Executive Chef or Chef de Cuisine
-Excellent presentation and culinary skills
-Fine dining experience absolutely necessary
-Prior experience in management and using computerized food management systems
-Proven ability to teach and coach others within the kitchen
Other pluses include, a positive mental attitude, well groomed, and an outgoing personality.
