Executive Sous Chef

Position Description:Ortanique Restaurants - Executive Sous Chef

Cindy Hutson Cuisine and Ortanique Restaurants is currently seeking a working Chef de Cuisine or highly motivated Executive Sous Chef for our Cabana Bay, Grand Cayman and our Miami location commencing immediately. Join a multicultural motivated, creative and cutting edge culinary team with growth potential.

-5 years experience in a high volume, fine dining restaurants

-Strong kitchen and leadership skills with ability to effectively coach and motivate staff

-Extensive knowledge of Caribbean cuisine and cooking principles

-Advanced cooking and knife skills

-Creativity and the ability to think outside of the box in an ethically driven restaurant

-Ample communication skills and organizational skills

-Ample computer skills, including Microsoft word, Excel, and Aloha POS

-Ability to prioritize, pay strong attention to details, is self-motivated and proactive

-Desire to grow and excel in the hospitality industry

-Ability to follow direction and execute the vision of the restaurant

-Ability to lift up to 50 lbs and be comfortable working on feet for more than 8 hours a day

-Fluency in the English language required

Responsibilities include but not limited to

-Meeting service, sales and profit objectives

-Supervising and directing associates in daily work activities

-Experience in food costing

-Computer skills, Word, Excel, and etc

-Maintaining proper inventories and costing

-Ensuring compliance with food control procedures

-Adhering to occupational, health and safety standards

-Displaying safe handling of food, proper standards of sanitation, cleanliness, and personal hygiene

-Staff scheduling

-Disciplinary actions
