Position Description:SOUS CHEF FOR ALL DAY CAFE AND TAP HOUSE 41 IN SIOUX FALLS

INTERESTS: Seeking Sous Chef interested in helping award winning restaurant company develop, manage and open two new dining concepts side by side in great Mall location in Sioux Falls, South Dakota. Opening December 2013. Call or email to find out more information.

RESTAURANT CONCEPT ONE: Tap House 41 Beers, Burgers & Bourbon, will be casual, upbeat, have dark hard wood accents, massive custom stonework, brick and stainless steel design elements. This fun 4000 sq ft concept will offer booth and table seating for 100 with seating for 24 at bar with 24 micro and hand-crafted specialty tap beers. 5 feature taps offer exclusive seasonal, limited and small batch artesian brews. Fine array of over 40 small batch and handcrafted bourbons. The menu offers beer and bourbon flights, Angus burgers, gourmet sandwiches and fresh cut fries.

RESTAURANT CONCEPT TWO:

All Day Cafe, an urban chic cafe, serving edgy and creative chef inspired, breakfast / lunch/ dinner menus with a comfort food spin. Full Service with table and booth seating, natural light, lots of pop art and high quality coffee. This restaurant will seat 150 guests along with a full bar and patio which together will seat an additional 100. The restaurant features a separate coffee barista counter and seating area for coffee / coffee beverages, pastries, healthy snack items to stay or to go. A full liquor, beer and wine menu will be offered.

QUALIFICATIONS: Seeking an experienced Sous Chef with previous high volume breakfast, lunch and dinner kitchen management experience. Must be able to help develop feature menu items. Assist with hiring, staffing and training opening crew with corporate chefs. Able to support, lead, coach and supervise two moderate to high volume kitchen cook and prep lines. Must have strong hands-on line skills, especially BREAKFAST skills. Need skills in food and labor cost control and trouble shooting, scheduling, some purchasing, assist with some menu planning, and inventory control. Need ability to train, coach and develop crew of employees. Must be able to monitor company standards and maintain clean and safe food environment. Need good people skills, team leading/coaching skills, high energy, quality food orientation. We are looking for a person with some business sense as well as an individual with culinary skills.
