|Position Description:||The Sundeck Restaurant is located 11,200 feet above sea level on top of Aspen Mountain. Guests reach the restaurant via a spectacular three-mile journey on the gondola from The Little Nell Hotel and are treated to breathtaking views of the Continental Divide and the most beautiful peaks in Colorado's Rocky Mountains. The restaurant offers casual dining in a mountaintop location that is the perfect place to soak up the beauty of the Rocky Mountains while refueling during a ski day. |
Expedites lunch service according to assigned shift.
Oversees the daily preparation and participates in food production, including temperatures of line product.
Works with production chef on all areas of butchery, soup production, salads, sauces, bakery rotation, fresh meat program, ect. Ensures freshness and quality in everything.
Production of high quality food for the restaurant, concentrating on impeccable taste and excellent presentation.
Spend time interacting with the guest and making a presence on the floor.
Responsible for keeping the kitchen and kitchen equipment clean and in good operating condition. Communicates any mechanical problems with the Engineering Department.
Responsible for keeping the walk-ins, loading dock, dry storage areas clean and orderly.
Responsible for providing for total maintenance and sanitation in all food production and service areas.
Economical use of products and labor, and managing restaurant kitchen and stewarding staff.
Develop two specials daily.
Assist with china, silver and glass inventory
Required to manage all employee payroll.
Physical requirements of the position include:
Working environment/physical activities: this position requires walking 10%, standing 90% of the time. Additionally, the job requires frequent lifting and carrying of 50 pounds. The job also requires climbing, balancing, stooping, kneeling, crouching, reaching, handling, talking, hearing and seeing.
Employee can expect to be outdoors 1% of the working time and indoors 99%.
Other environmental conditions to expect are: noise occasionally during the day, fumes, odors, mists and heat.
Education, Experience, Skills
Extensive experience in classic, contemporary and continental cuisines. Fully experienced in Garde Manger and basic knowledge in pastries. Experienced in management, cost control and staff supervision.

Other highlights include time with Michelle Richard at Citronelle in Washington, DC, three years with Guenter Seeger and a stint at the five diamond Ritz-Carlton New York, Battery Park.
McCormick credits his diverse culinary training and background in helping him find his own brand of cooking, which he describes as European-based food created with strict technique and a lot of soul. McCormick is also a firm believer in using and highlighting local ingredients, including farm-fresh meats, vegetables and cheeses.
The Little Nell's 20,000 bottle wine cellar has consistently earned Montagna the Wine Spectator Grand Award in recognition of our restaurant's deep passion for wine and the matching of the restaurant's delectable menu with each guest's taste.
