The New School's dining services program is looking for an innovative Chef de Cuisine candidate to join our expanding culinary team. The ideal candidate will assist the Executive Chef in the daily operations of The New School culinary program as well as further the vision of creating a state of the art sustainability driven higher education dining experience.
This position is responsible for overseeing the culinary team for The New School. The candidate will manage and lead a team of employees and oversee all safety, sanitation and food production for the university. The ideal candidate will have vast knowledge and experience in local food systems, sustainable dining practices, NYC food handling procedures and modern culinary techniques. The Chef de Cuisine will assist in menu creation and training of culinary team members. Fine dining experience in NYC is ideal.
Ideal Candidate will possess the following:
-Proven commitment and experience working extensively with local, natural and organic foods
-Degree in Culinary Arts is preferred or equivalent professional experience
-A minimum of 5 years of progressive culinary management experience
-A strong background in fine dining and catering
-Vegetarian, vegan and international cuisine knowledge and experience necessary
-Strong leadership, coaching and training skills
-Unionized employee experience strongly preferred
-Impeccable attention to detail and quality with a passion for excellence
-Extensive knowledge of culinary trends, ingredients and techniques including knowledge of NYC dining venue offerings
-Experience managing food quality, consistency & personnel at multiple outlets
-A minimum of 3 years working knowledge of food costing, menu development and management
-Experience working with catering menus and execution, both on and off site
-A demonstrated ability to lead a team & maintain good judgment and a positive demeanor under all circumstances
-A very strong work ethic & conformity to the highest standards of personal integrity and ethical behavior
-Availability to work a flexible schedule as needed including long hours, weekends, nights and holidays as necessary
-A self-starter mentality, innovation and the ability to multi-task
-Working experience with labor budgets and inventory controls
-Excellent verbal, written and interpersonal communication skills
-NYC Department of Health certification mandatory
-Strong customer service experience preferred including front of house experience
-Must be knowledgeable of HACCP/QA controls including safe food handling practices
-Proficiency in Microsoft Office Suite is required
