Navesink Country Club in Middletown, NJ is currently seeking a Sous Chef.
Job Summary (Essential Functions)
Work closely with the Chef de Cuisine on the daily operations of the Club's kitchen for member dining and banquets. Current food and beverage revenue is approximately $3M. The Club's facilities include a wide range of dining and event options ranging from traditional lunch fare to gourmet menus for groups up to 320 people. Responsible for the general operation of all aspects of the culinary operations in the absence of the Executive Chef and Chef de Cuisine.
Key responsibilities include:
1.Directly responsible for Member Satisfaction regarding: Food quality Timeliness of food preparation Food presentation
2.Work closely with the Chef de Cuisine and Executive Chef in menu development, costing, pricing and plate presentation.
3.Be a leader, mentor, and role model to the kitchen staff.
4.Maintain standards of hygiene throughout the kitchen.
5.Must be actively involved in staff recruiting, training, and evaluating performance.
6.Researches and sources new products and supplies to constantly develop menus.
7.Stays current on and incorporates culinary trends as applicable.
8.Participates in on-going facility inspections throughout areas of responsibility to assure that cleanliness, maintenance, safety and other standards are consistently attained.
Founded in 1963, Navesink Country Club is a very active family-oriented club with 460 year-round members. In the winter months, the membership grows to approximately 600 with the addition of the club's winter members participating in the hockey and figure skating programs. Amenities include an 18-hole championship golf course, seven Har-Tru tennis courts, an outdoor pool with diving, four platform tennis courts, and an NCAA regulation-size ice rink. The club is recognized for providing exceptional member experiences throughout the facilities.
The clubhouse features a Main Dining Room seating 320, a Members Grill with seating for 110, a Formal Dining Room seating 48, Men's and Ladies Lounges, an outdoor terrace seating 60, two small function rooms seating 30 and 14 respectively, and a 12-seat Wine Room. Food and beverage sales are in excess of $2 million. The club is open twelve months a year.
