|Position Description:||Executive Pastry Chef|
The Executive Pastry is responsible for the pastry and dessert production and plate up for banquets, a la carte restaurants and fine dining including:
Crystal Tavern, Restaurant Latour, Springs Bistro and Crystal Springs Banquet Department. Our pastry department produces about 80 wedding cakes per year and oversees our gelatoria with over 17 gelato flavors spun daily.
Creativity, good organization and consistency are a must
The executive pastry chef is responsible for a team up to 6 people including pastry cooks, apprentices and interns
Guest satisfaction in our restaurants and banquets revolves around the food appearance, high quality of the food and overall dining experience
Executive Pastry Chef may be required to take on the executive chef or executive sous-chef's responsibilities when they are not present.
-Work closely with the Chef de Cuisines and executive team to review the kitchen standards and maintain them
-Sets up station according to restaurant guidelines.
-Prepares all food items as directed in a sanitary and timely manner.
-Follows recipes, portion controls, and presentation specifications as set by the restaurant.
-Ensure all items are restocked as needed throughout the shift. Follow up with purchasing dept. in case of missing items, or sub-standard product quality.
-Cleans and maintains station while practicing exceptional safety, sanitation and organizational skills.
-Has understanding and knowledge of how to properly use and maintain all equipment in the station.
-Assists with the cleaning, sanitation, and organization of the kitchen, walk-in coolers and all storage areas.
-Performs any additional duties as requested by the Executive Team at any time.
-Prior pastry chef experience
-Advanced culinary degree or at least 5 years of continuous cooking experience in a distinguished establishment.
-Advance culinary knowledge in plated desserts, wedding cakes and banquet pastry production.
-Understanding and knowledge of safety, sanitation and food handling procedures.
-Professional communication skills are required.
-Ability to take direction.
-Ability to work in a team environment.
-Ability to work calmly and effectively under pressure.
-Must have problem solving abilities, be self-motivated and organized.
-Commitment to quality service, and food and beverage knowledge.
Must be able to work nights, weekends and some holidays.
Must be able to speak, read and understand advanced cooking directions.
