CULINAIRE provides restaurant management and catering services to a diverse collection of upscale accounts including restaurants, performing art centers, hotels, and catering venues. We are currently seeking a professional and talented Chef de Cuisine for Todd Gray's Watershed, a "Seafood and Southern" restaurant concept with fresh fish and seafood prepared unlike anywhere else in DC! Watershed is located in the new Hilton Garden Inn- NoMa, a 13 story hotel with an upscale vibe and decor. It's one metro stop from Union Station and one block from the New York Avenue/Florida Avenue red line.
As Chef de Cuisine you will be responsible for:
-Menu development -Coordinating, supervising, and participating in activities of the culinary team and other kitchen personnel -Food purchasing -Establishing and managing food and labor cost controls to insure a profitable operation -Ensuring quality and consistency are at the highest level while maximizing the operation's personnel and resources -Instilling strong safety and sanitation habits in all associates
What We're Looking For:
-Creative and innovative culinary skills -Thorough knowledge of food handling and preparation techniques -Strong inventory and cost controls -Past experience developing production sheets and schedules, job duties, and timelines -A team player with proven leadership skills and ability to build/sustain a team spirit and high morale -High expectation of standards in regards to quality and presentation -Ability to consistently produce profit expectations -Basic knowledge of Microsoft Word, Excel, and Outlook -2 or 4 year formal culinary degree from an accredited Culinary School -Minimum of 2 years experience in a culinary management position within an upscale restaurant -Good job stability and career progression -Passion for the industry and a drive to succeed
