Dynamic, successful, growth-oriented Washington DC restaurant group seeks a qualified Chef de Cuisine to lead its newest restaurant. The successful candidate should have a successful culinary background and a fundamental knowledge of the diversity and bold flavors of Southeast Asian cuisine.
Our group currently operates two highly successful and critically acclaimed Washington DC restaurants - Proof (www.proofdc.com) and Estadio (www.estadio-dc.com). This Summer we will open Doi Moi in the white hot Logan Circle neighborhood. Doi Moi will feature the regional cuisine of Southeast Asia (principally Vietnam and Thailand) inspired by the dishes found at street stands, stalls, and storefronts in the great cities of this food-obsessed region. Working with Executive Chef Haidar Karoum (who also serves as Executive Chef of Proof and Estadio, and previously as Chef de Cuisine at Asia Nora for 7 years), the Chef de Cuisine is responsible for coordinating, supervising and directing all aspects of the restaurant's food production, while maintaining a profitable operation and producing a product of outstanding quality.
-Control food and labor costs within an established budget by utilizing proper buying tools, waste management, and time management of staff
-Ensure that the quality and quantity of all purchases meet established standards
-Manage all kitchen staff, including hiring, training, evaluation, and firing, and comply with all related human resource legal standards
-Orchestrate and be responsible for the inventory process
-Enforce safety and sanitation procedures throughout the kitchen
-Menu development and implementation
-Develop and implement plans to insure that kitchen staff is properly trained on food quality and preparation as well as health and safety standards
-Executive Chef, Chef de Cuisine, or Executive/Senior Sous Chef experience directing a team at a well-rated Asian restaurant
-Minimum of 3 years Culinary management experience
-Culinary focused Associate's or Bachelor's degree
-Extensive knowledge of menu development and Asian food products
-Food safety and sanitation certifications as required by law
-Strong interpersonal, managerial, communication, and leadership skills
-A diligent work ethic with a strong drive for consistent excellence and high productivity
