|Position Description:||We are a working winery and upscale contemporary Texan bistro, emphasizing wine and food pairings located 10 miles west of downtown Fort Worth, Texas.|
We are low volume, high quality kitchen with a small, dedicated team.
Influences here are French, Californian, Mediterranean and Southwestern. Our cooking foundation is French and then we play. We appreciate the work of Chez Panisse, Prune, Barley Swine, Boulevardier, Fleur de Lys and others. You should know who these folks are and what this type of cooking is about.
We focus on the quality of the work and we are proud of what we do in cooking, service and wine.
Work with Executive Chef/Owner to develop menu and recipes.
Shopping, prep and line cooking (mostly saute).
Lead the kitchen in day to day tasks, managing the other team members as well as food prep, storage and inventory.
Most of our food is cook-from-scratch; you must understand fresh product intake, breakdown and prep, as well as have strong cooking skills.
This position offers the ability to be creative and execute a frequently changing menu, always striving for top quality food and presentation.
Wed - Sun, 50 hrs/wk
Three years professional experience in a higher quality/finer dining environment.
Excellent cooking skills and understanding of how to handle quality product will set you apart.
Reliable, trustworthy, no issues with alcohol or drugs.
Must have own transportation.
Proven leadership capability
Proficiency in basic French techniques, including
Sauces, braises, stocks, emulsions, infusions and soups
Protein breakdown, esp fish and beef, and excellent timing skills.
Know how to run a line, with knowledge of every station.
Work clean and fast.
Ability to invent amuses or work off menu as needed.
Able to work high pressure saute while directing the team.
