The Little Nell Hotel/Element 47 Restaraunt in Aspen, Colorado is looking for an energetic creative individual to take on the Pastry Supervisor role.
Maintains smooth operation of the pastry kitchen during assigned morning or evening shift. Ensures food is prepared according to chef?s specifications and trains employees to hotel/kitchen standards. Prepares items for all facets of hotel food service.
Essential Functions of the Job
+ Provides back up support to am crew, pm crew and banquet functions with plating, preparation of mis en place, cleanliness
+ Expedites dinner service, cleans after shift, finishes daily production list
+ Assist pastry chef with administration of apprenticeship program, scheduling, disciplining and supervising
+ Communicate with Pastry/Executive Chef regarding staff performance, guest comments, special requests, menu changes, etc.
+ Train staff to standard performance levels
+ Assist in writing menu descriptions for all new dishes for FOH, and BOH, along with up to date recipes
+ Assist with production of menu items, special requests, menu development etc.
+ Assist with monthly inventory
+ Ensure food costs are at the forefront of menu development, systems and pricing
+ Enter new menu items into chef tech/update recipes
+ Monitor schedule and staffing levels, being mindful of budget and volume levels
+ Inspect product quality, pricing, and sourcing to provide the best quality/value

+ Make manager aware of guest comments and complaints
+ Report to work in a neatly groomed and acceptable manner as outlined in the employee handbook
+ Report for shift on time
+ Comply with all policies and procedures for the food and beverage department, The Little Nell, and Aspen Skiing Company
+ Is familiar with hotel fire and safety procedures, assist in emergency and security procedures as directed by management
+ Complete tasks and projects delegated by your manager and assist other departments as business volumes and staff levels demand

Physical requirements of the position include:
+ Kneeling, bending, and standing for extended period of time
+ Ability to lift 50 pounds, push/pulling up to 200 pounds
+ Work in hot, steamy environment that includes noise, fumes, odors, mists and extremes of hot and cold
Education, Experience, Skills
+ High School diploma or equivalent.
+ Two years pastry experience.
+ Culinary degree or equivalent.
