Position Description:
Celebrity Chef and restaurateur Emeril Lagasse is seeking a passionate and hardworking Sous Chef for his restaurant, Delmonico Steakhouse, located at the Venetian Hotel Casino Resort in Las Vegas, NV. Delmonico Steakhouse is a 260 seat upscale fine dining restaurant using prime USDA beef.
The restaurant uses many local and regional ingredients as well as a wide array of high-end ingridients such as truffles. All applicants for this position need to have a strong background in American cuisine.
Responsiblities
-Lead, manage and motivate a staff of 35+ line cooks and kitchen staff on a daily basis.
-Ensure quality, consistency and excellence of all food served in or sold from Delmonico Steakhouse.
-Manage food cost, labor cost and applicable operating expenses per budget.
-Maintain highest standards of food safety, sanitation and cleanliness.
-Uphold all workplace standards, policies and procedures as set forth by Delmonico Steakhouse.
-Assist in menu development.
-Continual training and mentoring of staff: front and back of house.
-Preparation and writing of daily menu.
-Willingness and ability to accommodate special guest requests.
-Be self-motivated
Requirements
-Strong cooking and expediting skills with a willingness to work the line
-Effective communication skills.
-At least 3 years experience in a similar position.
-Strong organizational skills.
-Willingness to work long hours.
-Must be able to thrive in stromg team environment
