|Position Description:||Ruby Tuesday is seeking a Culinary Research and Development Chef in our Culinary and Beverage Department at the Restaurant Support Center in Maryville, Tennessee|
This position is responsible for playing an integral role in researching and development of new menu items for Ruby Tuesday. The primary functions will be to develop a pipeline of consumer preferred products that deliver on the promise of crave-able flavors, fresh food, & high quality that you can?t make at home. And to ensure that every product we serve reinforces the brand positioning, is consumer maximized, and can be consistently delivered to our guests.
Essential Duties and Responsibilities
-Research & Development menu items that can be executed consistently at the restaurant level.
-Develop improvements to culinary operational procedures and execution
-Integral in the testing of new menu items, procedures, and equipment
-Integral in the creation & upkeep of all BOH related materials and programs
-Supervise operational field training procedures and programs
-Must possess a full and rich understanding of the food service industry.
-Must have a thorough understanding of multiple cuisines and there impact on today?s guests choices
-Has the ability and desire to research and study foodservice industry trends and apply this knowledge to everyday work.
-Provide communication to restaurants regarding product handling and procedural changes.
-Thorough understanding of the raw ingredients used in kitchens, their quality characteristics, correct handling and storage.
-Possesses an exceptional understanding of all fundamental culinary arts skills.
-Provide culinary training support as well as materials maintenance.
-Excellent communication skills. Written, Verbal and Presentation.
-Requires outstanding organizational and time management skills.
-Requires thorough knowledge of or strong ability to learn Microsoft Office suite and related computer skills.
-Requires outstanding eye for detail and strong proofing skills.
Education and/or Experience
Culinary Arts Degree or an equivalent combination of education and experience with 3+ years business experience in a restaurant or R&D setting is required.
This position requires advanced cooking and commercial kitchen skills such as but not limited to knife handling, food preparation, and maintenance of equipment.
