Executive Chef

Position Description:The Executive Chef is a member of the Foodservice Leadership team at Mercy Medical Center - North Iowa. The Executive Chef is responsible for the department menus and provides supervision of the food production team, including hot and cold food production as well as catering.

The Executive Chef is considered the leader of quality control, culinary development, marketing and works within a tight budget. This position assists with and monitors adherence to department and hospital policies and procedures, regulatory standards, and food safety/sanitation standards in food service daily operations.

QUALIFICATIONS:

High school graduate or equivalent certificate required. Degree in Culinary Art required or Certificate of completion from an accredited culinary trade school (2-4 year program or ACFEI apprenticeship program). BS/BA in Hotel/Restaurant Management or related field is desirable. Five years of general foodservice experience.

Three years of culinary management, Executive Chef or Sous Chef experience. Knowledge of therapeutic/modified diets or healthcare experience is preferred. Previous room service experience is also desirable. A proven track record of team building/cost controls and 5 years of managing people, preferably at an Executive Chef level.

Strong culinary skills are essential, along with customer service, management, organizational, quality assurance, and financial skills. Strong computer skills. Previous experience with CBORD desirable. Effective verbal and written communication skills. Be able to effectively train and orient new associates.

Ability to perform detailed assignments, follow directions, work under pressure, and readily adapt to change in routine and work assignments. Requires a valid driver's license to transport food and supplies. Provide proof of Mandatory Reporting via current certificate or complete the course within 6 months of hire. To be renewed every five years. Serv Safe certification or other food safety or HACCP certification.
