As an Executive Chef you will be responsible for the management of all culinary staff training and development.
This will include the oversight of lead kitchen personnel, ensuring proper supervision and coordination of all food preparation, cooking, and other related culinary activities.
The Executive Chef will be responsible for establishing guidelines for food consumption and requisition or purchase food as needed based on these guidelines.
You will develop menus to reflect seasonality, locally sourced food product, fresh to order food production initiatives, recipe development and standardization, establish a presentation program and quality standards, plan and price menus, ensures proper equipment is operational and ensure proper safety (HACCP) and sanitation in kitchen.
You will be responsible for culinary instruction and/or demonstration of culinary techniques for culinary team.
The Executive Chef directly supervises kitchen personnel with responsibility for hiring, discipline, performance reviews and initiating pay increases. This position reports to the General Manager.
Essential Functions include:
P/L oversight Food cost Labor costs Maintain staffing guides Managing staff schedules, production?follow Union Contracts when applicable. Quality standards as determined by Aramark standards Presentation standards as determined by Aramark standards Goal and objective development with General Manger as dictated by S & E CMP Regional Innovative Menu development, and implementation Organic or locally sourced sustainable product implementation Organize and maintain paperwork as it relates to operation and HR requirements Protect the assets of the venue Protect health and safety of the staff Insure all food handling staff is Servsafe certified Maintain sanitation standards - including, time and temp logs in all food operations Follow up and inspection of delegated duties HACCP oversight Computer literate Involvement with local Marketing program including Fundraisers, cooking demonstrations, local media, print media Business Development Assist in development and implementation of new programs Implement Marketing and New menu promotions locally Consult with GM/F&B to determine regional menu mix and requisite skill set requirements for their accounts. Optimize food cost, labor cost, top line growth, NVD program. Work with component risk manager to implement kitchen product safety parameters, such as HACCP, and product risk assessment procedures. Resource Development Assume responsibility for implementation of culinary skills training programs Responsibility for the development and execution of targeted culinary programs as determined by REC Responsible for execution of component recognition and reward programs Provide regular assessment of Sous Chefs and hourly staff to HR Director, FB Director of high performing candidates for advancement. Recruiting staff - utilizing regional chef schools, trade schools and local job fairs Develop hourly staff through one on one goal and objective outline Leadership development of Sous chefs through CMP process
Participate as a culinary resource on regional culinary support teams. Participate in regional marketing and field presentations showcasing training capabilities/programs and culinary capabilities.
