Responsibilities and duties include:
-Coordination of employee work schedules and leave authorizations. -Ensuring excellent labor relations. -Responsibility for the training, supervision, motivation and organization all employees in the kitchen department. -Maintain staffing levels the kitchen according to budgeted figures. -Develop and create menus and daily specials and supervise their implementation, making sure that menus are prepared correctly and ready for service. -Expedite the kitchen during service ensuring compliance with Pelican Hill standards. -Participate in all food and beverage inventories. -Ensure the food cost for the hotel is maintained at budgeted levels. -Assist the Executive Chef in planning of food budgets and forecasts.
Preferred Qualifications include:
-Significant successful track record as Executive Sous Chef in highly rated fine Hotel or Resort setting. -Degree in Culinary or Hospitality Management. -Thorough knowledge of all health and labor regulations related to hospitality operations. -Strong written and verbal communication skills required. -Understanding of Italian and Mediterranean cuisines. -Ability to work in a team environment and motivate others.
