Responsible for all food & food related costs, procedures, quality, and all back of house labor percentages & budgets.
I. Kitchen(s) Recruitment, Development and Management
-Recruitment and training of Supervisors and hourly Team Members.
-Development and appraisals of Supervisors and hourly Team Members.
-Ensure discipline/termination procedures follow all HOB guidelines.
-Ensure compliance with HOB Workplace Standards.
-Facilitate proper inter-departmental communication and organization.
-Overall department leadership.
-Maintains positive talent relations.
-Physical plant/facilities management.
II.Ensuring Optimal Perception of HOB

1.WORKING KNOWLEDGE OF:
Kitchen and dishwashing procedures, responsible for food and beverage costs, labor costs, and product costs in above areas, Excel, front of house procedures (Micros), Citrix, party/banquet prep, inventory and invoices.
2. ENTRY LEVEL KNOWLEDGE OF:
Operations and procedures of a multi- faceted entertainment facility.
3. Essential personal and interpersonal skills:

Minimum 3 years kitchen management experience and fine dining cooking management experience
