Sous Chef

Position Description:The Sous Chef at The Escape is responsible for the execution of all aspects of food production, demonstration and hands-on cooking class experiences and guest service relative to the Escape at Wind Creek venue. Special emphasis is placed performing cooking demonstrations in the casino to educate, entertain, and stimulate bookings for the cooking studio. The Escape concept is based on inspiring others to embrace a healthy and fun lifestyle. As such, the Sous Chef is at the forefront of producing healthy, palette pleasing cuisine.

Duties and Responsibilities:

-Ensures that all food products prepared meet the established specifications and standards.

-Check the quality of raw and cooked food products to ensure standards have been met.

-Demonstrates cooking techniques, recipes, and equipment to kitchen staff.

-Ensure that guests are provided with an entertaining, fun, upbeat and educational food demonstration experience.

-Administers production schedules and staffing schedules based on guest volume.

-Ensures the proper levels of food are prepared based on forecasted needs and ensures their prompt delivery.

-Ensures the minimum level of labor is used to perform the required level of production.

-Travel and participate in promotional activities as required.

-Assists the Specialty Chef in menu planning and food cost control to adhere to budgetary requirements.

-Completes required daily financial tools and reports.

-Communicates variances from standards to Escape Specialty Chef.

-Maintains a sanitary, neat, clean, organized, safe and comfortable environment for employees and guests.

-Ensures that kitchen equipment is handled safely and with reasonable care.

-Meets the attendance guidelines of the job and adheres to regulatory, departmental and company policies.

-Other duties & responsibilities as assigned.

Job Requirements:

(please ensure you meet the listed requirements prior to applying)

-High school diploma or GED required.

-Must be twenty-one (21) years of age or older.

-Must have a Culinary Degree or formal apprenticeship with a minimum of two years multi-ethnic professional cooking experience in a fine dining establishment.

-Must have (2) two years of experience as a Sous Chef, and or, kitchen management experience.

-Must be able to entertain, educate and skillfully demonstrate food creation in the public arena (audition required).

-Must possess excellent oral and written communication skills (skills test required).

-Extensive and advanced knowledge of food preparation, cooking methods, and techniques.

-Experience in menu development, creative plate composition and presentation of foods.

-Must possess ability to compute rate, ratio, and percent and to interpret data from graphs.

-Must be able to work independently and as part of a team, as well as train & develop staff.

-Must be able to deal effectively with diverse departments and have flexibility to work in an ever-changing environment.

-Ability to adequately and successfully perform all aspects of this position.

-Knowledge of kitchen sanitation, operation and maintenance of kitchen equipment; ServSafe Certification (or ability to obtain certification).

-Willing to travel and participate in training as recommended or required.

-Must have a PCI Gaming License (or the ability to obtain and maintain a license) as a requirement for this position.

-Must have willingness and ability to work in a smoke/secondary smoke environment.
