Summary: Prepares and portions all meat and seafood items for menu and special events.
Essential Duties and Responsibilities include the following. Other duties may be assigned.
-Cuts, trims, and bones carcass sections or prime cuts to reduce to cooking cuts such as roasts, steaks, chops, stew cubes, and grinding meat.
-Cuts and weighs steaks and chops for individual servings.
-Cleans and cuts fish and poultry.
-Estimates requirements and requisitions or orders supplies and reports shortages.
-Rotates food items.
-Reports equipment malfunctions immediately.
-Cleans work area.
-Assist the Saute Cook with the preparation of sauteed items.
