General Summary:
This position is responsible for leading and assisting with all food production and delivery for the caf? and banquet events. This position provides direction and training to line cooks, prep cooks and dishwashers.
Receiving daily product deliveries, order reconciliation to delivered products, and performing inventory are also essential job functions. The Sous Chef also assists with food costing, and menu planning. This position works directly with the Cafe Chef and Manager to assure a high level of customer satisfaction, timely food production and delivery.
ESSENTIAL DUTIES and RESPONSIBILITIES:
1. Food Production and inventory
-Communicates recipes, portioning and merchandising details to Line Cooks as directed.
-Creates production sheets and coordinates daily workflow.
-Ensures that production deadlines are met and that stations are prepared for service.
-Tastes all prepared food and ensures compliance to recipe and checks seasoning
-Provides feedback to management on product quality and vendor service
-Partners with management to maintain appropriate inventory levels on-hand
2. Maintain kitchen, storage and serving areas
-Ensures that all kitchen and storage areas are organized, clean and safe.
-Ensures that product is stored (FIFO), dated and labeled properly.
-Ensures that safety and sanitation procedures for compliance with all guidelines form OSHA, Department of Public Health and Risk Management are met.
3. Customer Service and Staff Motivation
-Trains and coaches staff on customer service skills
-Continually seeks opportunities to improve the customer experience.
-Develops and motivates kitchen teams to continually upgrade skills and food knowledge
-Provide performance feedback on consistent basis
-Provide training and coaching as needed to direct reports for performance improvement
REQUIRED QUALIFICATIONS:
Minimum Education Level:
-High School Graduate
-Culinary Degree strongly encouraged
-Current Qualifying Certificate in Food Production issued by New York City
Experience:
-5+ years of food service experience
-2+ years as a Sous Chef at a professional hotel, restaurant or corporate dining facility
-Corporate dining experience strongly encouraged to apply
Physical Requirements:
-Ability to easily move throughout with cafe and kitchen
-Ability to handle kitchen equipment and tools safely
