Position Description:Chef John Griffiths of Truffles Restaurant in Saint Louis (www.todayattruffles.com) is now accepting resumes for Sous Chef.

Successful applicants should have at least 4 years of related progressive experience with modern, seasonal fine cooking. Must have knowledge of Modern and classical cooking techniques and at least some knowledge of Italian cookery techniques and philosophies.

The Sous Chef is responsible for ensuring that all foods and meals are well prepared with regard to quality, consistency, eye appeal, taste and cost. The Sous Chef is expected to provide training for staff and assist in establishing and enforcing taste, portion control, recipes and sanitation. The Sous Chef must assist in the control of food and labor costs while maximizing guest satisfaction.

Truffles Restaurant is a progressive Modern Italian Restaurant that seeks to take the finest Midwestern ingredients and pass them through the filter of Italian cooking techniques.
