|Position Description:||The Brasserie Restaurant & Market, located on Grand Cayman Island in the Cayman Islands, is seeking a high-energy General Manager / Sommelier with a passion for food & wine.|
About The Brasserie
The Brasserie is located on Grand Cayman Island in the Cayman Islands. We are an island restaurant with big city sensibilities, leading the area in sustainable practices, localism, and blending of cultural foods with modern American. basics. Chef/Restaurateur, Dean Max, known for his many restaurants in the states and most notably his flagship restaurant, 3030 Ocean, has teamed up with owners Lisa and King Flowers to create a culinary oasis in the Caribbean.
The restaurant boasts a state of the art kitchen, a garden on property, its own fishing boats, a 1000 bottle wine cellar, a metropolitan style market, a satellite pavilion bar surround by lush tropical landscaping for catered client events and plenty of local suppliers to provide the base for this amazing complex.
We enjoy a very strong following in the local community and have a largely repeat clientele.
About The Role
For the right person, this position offers a great deal of flexibility to work with the owners and Chef to streamline and improve the operations of the business and identify opportunities for growth, whilst receiving sufficient support and guidance to allow you to achieve your full potential.
Day-to-day duties include managing and motivating a dedicated front of house team, along with responsibility for beverage purchasing and sales. The successful candidate will also be required to:
-Develop, organize and implement successful promotional activities and events
-Develop relationships with the local media / key members of the community and work with them promote the restaurant / Brasserie brand
-Contribute to discussions regarding menu design and work with bar staff to develop unique and creative cocktails.
-Communicate with guests and potential clients via social media (facebook and twitter).
The role has a high degree of public visibility. Along with interacting with our guests, you will also be required to use your superior food and beverage knowledge to inform and educate guests and the wider public about our menu and our wines specifically, and the Brasserie's philosophy in general.
Qualities of Our Ideal Candidate
The successful candidate will be an energetic person with a fresh and creative approach, along with a proven track record in hospitality management. He or she must be able to adapt to and be flexible about the island way of life. A minimum of three years experience serving sophisticated/fine dining clientele is essential.
A solid knowledge of old and new world wines is necessary, along with the ability to sell and serve wine.
Knowledge of artisanal/seasonal cocktail mixology or strong bar tending experience is essential.
Our next General Manager / Sommelier will possess a warm and welcoming personality, impeccable verbal and written communication skills and a strong work ethic.
The anticipated start date will be May 2012, with a minimum two year commitment required.
